As a mom to two little boys who tried my hardest to live a “Slow living” lifestyle, I’m not lying about our somewhat rushed mornings somedays! (those days when we are too cozy and wake up late…yea, we’ve all been there). But that's why I'm sharing this game-changer recipe with you today: High Protein Cottage Cheese Egg Bites! You can prepare them ahead of time and quickly heat them up when it’s go time in the morning.

You can batch make these little bites of goodness and voila! You have a ready-to-go, high-protein breakfast for the entire week. Trust me, as a mom to two adorable but super active boys (lol), this high protein mini egg bites for kids recipe has been amazing for me!

If these are going to be a high protein breakfast staple, I HIGHLY recommend grabbing these non toxic, cast iron muffin molds. The issue with so many non-stick muffin pans is that they leak toxins known to mess with your hormones and health!

OR sometimes I ditch the muffins and I simply pour the egg mixture into a non toxic cast iron pan (this is my go to that I use EVERY SINGLE DAY). The trick it to put the cast iron in the oven as you preheat the oven so it’s nice and hot. Then pour some avocado oil on the bottom and then pour the egg mixture in. This keeps the eggs from sticking to the bottom and avoids toxins that are found on almost every dang baking pan out there these days!

High Protein Egg Bites with Cottage Cheese Recipe (Makes 6 servings)

Ingredients:

  • 10 large organic eggs (about 6 grams of protein each) Thankfully my mom has her own chickens so we get stocked up on backyard eggs every 2 weeks! But I recommend getting some from a local farmers market since they have higher nutrient content. OR you can even try duck eggs here to switch it up!)

  • 1 cup organic Good Culture cottage cheese (MY ALL TIME FAV COTTAGE CHEESE!)

  • 1 cup cooked and diced meat (organic turkey bacon, ham or chicken from local pasture-raised animals are the best!)

  • 1/2 cup diced organic bell peppers

  • 1/4 cup diced organic spinach or kale

  • 1/4 cup finely chopped green onions

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste (even some organic nutritional yeast for extra protein, b vitamins and nutrients!)

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or silicone egg bite molds with a bit of avocado oil to prevent sticking. If you’re using the cast iron, place your pan inside the oven at this point to heat it up.

  2. Whisk the eggs and cottage cheese together in a large bowl until well combined. The mixture should be relatively smooth with small bits of cottage cheese throughout. If you are adding nutritional yeast for extra nutrients and cheese flavor, I would whisk it in here!

  3. Cook the veggies: Heat a small skillet over medium heat. Add a teaspoon of olive oil, then sauté the onions, bell peppers, and spinach (or kale) until they're just softened. Let them cool for a few minutes before adding them to the egg mixture.

  4. Add the cooked meat to the egg and cottage cheese mixture, followed by the cooked veggies. Stir in the garlic powder, salt, and pepper. Mix everything until well combined.

  5. Divide the mixture evenly among the prepared muffin cups or silicone muffin cup molds. Fill each one about 3/4 of the way to allow room for the egg bites to rise.

  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top. A toothpick inserted in the center should come out clean.

  7. Let cool for a few minutes in the pan/molds, then run a knife around the edges and remove the egg bites. Serve warm.

Nutritional Information:

This recipe should yield about 6 egg bites for kids, depending on the size of your muffin cups or molds. To hit the target of 25-30 grams of protein per serving, you can adjust the serving size. Based on the ingredients, two to three egg bites should provide approximately 30 grams of protein, depending on the specific meat used and the size of the eggs.
